I have been wanting to get use out of our slow cooker for a long time now. They are so convenient and with a baby on the way it will be a great time saver so i thought it best to get using it now. This recipe is so easy and a real comfort food.

Ingredients

4 chicken breasts or thighs (whichever you prefer)
2 medium cans of condensed chicken soup
400ml/ 1 1/2 cups white wine
Big handful of large green olives (I used garlic olives)
Big handful of cherry tomatoes
2 medium onions
salt and pepper
olive oil
Flour

  1. First, brown the chicken in a little hot olive oil and season with pepper. Put these on the bottom of a slow cooker.
  2. In a bowl mix the tins of soup and the wine until it is smooth and pour on top of the chicken.
  3. Chop onions, olives and tomatoes and add to the sauce mixture.
  4. Set the slow cooker on low and simmer for 8 hours.
  5. If the sauce needs thickened which it might depending on brand of soup used, use flour.
  6. Serve with rice (I always cook rice with a chicken stock cube. Just tastes nicer).

This recipe can be modified in so many ways. You could add mushrooms instead of tomatoes or be adventurous with the type of wine you use. Just add to the pot whatever springs to mind! Oh, and there was a large glass of wine left in the bottle for hubby to have with his meal.
