Hubby’s Simple Chili (very easy)
11May08
My husband is king chili maker and last night was one of the best, I’ve added his very own recipe :)
Ingredients
500g lean steak mince
2 cans chopped tomatoes
3 large onions
3 red and 3 green chillis
2 beef stock cubes
2 chicken stock cubes
5 cloves garlic
2 jars pinto beans (or kidney)
a lot of mild chilli powder… (personal taste)
teaspoon cumin
teaspoon oregano
optional: tomato puree, tomato ketchup, tobasco and a secret ingredient… Hubby has previously tried a cup of coffee, can of guiness, cup of coca cola, grated dark chocolate… just be adventurous to see if it changes the flavour any!
- Finely chop onions, garlic and chilli and soften in the large pot you will be using for the the chili.
- Add mince and brown.
- Dissolve stock cubes and add.
- Add everything else.
- Simmer for 1 hour (or longer… depends on personal taste).
- Chili can then be eaten with tortilla chips, on rice, on baked potato or like we did recently… in a tortilla wrap with salsa and grated cheese on top and baked. Yum!
* Please note chili tastes even better the next day, reheated!
