Ultimate Twice Baked Potatoes

Ingredients
3 large potatoes (or as many as you would like)
6 slices of streaky bacon, chopped
2 medium onions, chopped
1 tbsp mayonnaise
1 tbsp mustard
grated cheese for the top
olive oil
salt and pepper
- I normally drizzle olive oil, salt and black pepper on top of the potatoes before I bake them so the skin goes nice and crispy. Bake at 175degreeC for about 50 minutes.
- While potatoes are baking, fry the bacon and onions together.
- When the potatoes are finished cut in half and scoop out the middles. Put the scooped potato in a bowl with mayonnaise and mustard and mash. Add the fried bacon and onion.
- Spoon the potato mixture back into the skins, cover with grated cheese and put back in the own for 15 minutes.
Yummy.
