Ingredients

3 large potatoes (or as many as you would like)
6 slices of streaky bacon, chopped
2 medium onions, chopped
1 tbsp mayonnaise
1 tbsp mustard
grated cheese for the top
olive oil
salt and pepper

  1. I normally drizzle olive oil, salt and black pepper on top of the potatoes before I bake them so the skin goes nice and crispy.  Bake at 175degreeC for about 50 minutes.
  2. While potatoes are baking, fry the bacon and onions together.
  3. When the potatoes are finished cut in half and scoop out the middles.  Put the scooped potato in a bowl with mayonnaise and mustard and mash.  Add the fried bacon and onion.
  4. Spoon the potato mixture back into the skins, cover with grated cheese and put back in the own for 15 minutes.
